If you’re included veggies in your foil package, take out a little bigger piece of foil to accommodate them. To keep the foil from sticking, spray it with cooking spray or use nonstick aluminum foil to prevent it from sticking. Make sure you use one sheet of aluminum foil for every piece of chicken you are baking.
Step 2: Prepare Your Chicken
Remove any extra fat and any residual parts of skin from the chicken, washing it if desired, and set the chicken aside. Place one chicken breast in the center of each foil sheet that has been prepared.

Then, approximately two-thirds of the way through, cross-grain slice the chicken breast again, this time spacing the slices about a third of an inch apart. Prepare the filling by tossing crumbled bleu or feta cheese with baby spinach leaves and spooning the mixture into the cutouts. Lightly season the chicken breasts and wrap them in aluminum foil to create a package before baking them.
Step 3: Season Your Chicken
Cross-cut the chicken breast cross-grain approximately two-thirds of the way through the meat, spacing the cuts about three-quarters of an inch apart on the diagonal. Toss the crumbled bleu or feta cheese with the baby spinach leaves and ladle the mixture into the slits in the crostinis. Before baking, lightly season the chicken and wrap it in aluminum foil to create a package.

When you’re ready to fry the chicken, brush it in with oil and roll it in some breadcrumbs or whole-wheat flour before spreading it on aluminum foil. Bake it without any vegetables, with the foil partially opened for about five minutes near the end of the cooking time to enable steam to escape and a crust to form on the top. Another alternative is to coat your uncooked chicken breasts with your preferred sauce before wrapping them in aluminum foil and gently closing the package to retain the sauce inside.
Step 4: Add Your Vegetables
If desired, include any cooked veggies. Firm vegetables, such as potatoes or carrots, should be thinly sliced or julienned. It is possible to cut tender vegetables such as zucchini or shallots thicker in order to help them keep their form better.
There may also be other veggies that do not require slicing that are included. Folio packs are an excellent choice for asparagus, snow peas, or yard-long beans chopped into pieces. Place a selection of veggies on a piece of aluminum foil and wrap it around the chicken.
Step 5: Create Your Foil Packet
Make a foil package by pulling the side edges of the foil together above the meal and sealing the sides together. Fold the two pieces of aluminum foil down until the fold comes near to the food, keeping the edges together as you go. Fold the meal in half and press it flat against the fold. To seal the packet, fold and crimp each end of the aluminum foil.
Step 6: Bake Your Foil Packets
Bake the foil-wrapped chicken on a baking sheet in the oven for 30 minutes. Bake the chicken packets for approximately 30 minutes at 350°F. Check the doneness of each package by opening it. According to the USDA Food Safety and Inspection Service, the chicken is done when the meat is no longer pink and the internal temperature of the thickest section of the breast registers 165 degrees Fahrenheit on an instant-read thermometer — the minimum safe temperature for poultry. If the tin foil chicken is not cooked through, rewrap it and place it back in the oven to continue cooking.
Warning
Immediately after handling raw chicken, thoroughly wash your hands with warm water and soap. The Centers for Disease Control and Prevention recommend that you clean the sink, counter and utensils after handling raw chicken to prevent cross-contamination from the raw chicken.
